First of all - what happened to us? Did we all stop eating? We need some more inspiration!
SOooo ........... I'm probably the last person on planet Earth that has gone out and purchased an Instant Pot. It's the new-wave all-in-one pot that can be both a slow cooker (think CrockPot) as well as a fry pan (the Saute option) and a pressure cooker. Since like Choop it seems that I am the one doing most of the cooking (Mrs AP could fail at boiling water - I could tell you some horror stories about her misadventures in the kitchen!) but working a full day, I like the idea of anything that speeds up the food prep/cooking process. I also like (my wife likes it more since she does the clean up) that all the cooking takes place inside of one pot/device.
Like I said, I only just got this device and I've prepared two meals in it so far -- a beef stew that came out pretty darn well, and beef ribs that were just about fall-off-bone tender. I should have remembered to take pics, but I guess I forgot as I was too excited about just getting the use of this device correct and not screwing up something to mess up the meal.
Anyway ..... has anyone done any cooking with their Instant Pot, and if so any good recipes to share?
The instapot has been an awesome appliance for us traveling nomads. We use it at least once a day. Steel oats in the morning is super easy. I know of one RV’r that swears it is great for ribs. You can make foolproof rice, I can cook spaghetti squash or any squash in 7 minutes instead of heating up the space with the oven. We make a lot of soups, stews even chicken breast sauté first then cook in 4 minutes if raining and can’t grill.
if you like curries there are many recipes to follow. This woman has some really simple and well written recipes I like.
Have now used my Instant Pot a few times, and it indeed seems to be a time-saver and a "one pot" cooking device. I have fixed fried chicken thighs in it, and also ropa vieja -- came out great. It's also easy to cook things fast like green beans - 2-3 minutes for crunchy beans, 6-7 minutes for soft southern-style. Sorry I don't have photos -- I'll be sure to get some next time I do a meal in it.
