Heres a nice take on fried rice without all the carbs.
Ingredients: 1 pkg crumbled cauliflower, 1 lb frozen cooked shrimp, diced cooked shrimp, pork or tasso and chicken, chopped onion, green onion, red bell, carrot, garlic, and fresh peeled ginger, 2 eggs, soy sauce, canola oil, and sesame oil.
Finely chop 3 cloves garlic and a couple tbsp of fresh ginger. In a wok or large nonstick pan, add 3 tbsp oil and sauté the ginger and garlic. Next, scrabble the eggs in the wok. If you have raw shrimp, sauté them in a dry nonstick skillet for a minute or two to remove some of its moisture. Next, add the chopped veggies, the diced meat and shrimp, and the crumbled cauliflower. Over hight heat, flip and stir for about 5 minutes. Add soy to taste. A little sesame oil goes a long way so use it sparingly.
Its amazing how much the cauliflower tastes and resembles rice.
