Caught a nice flounder the other day and filleted it into 4 sections. On the way back home I stopped at a local specialty meat market and picked up a couple of their shrimp burger patties then bought 4 U-10 shrimp from the seafood market.
The shrimp were butterflied from the underside to remove the vein making sure not to cut through the top side of the shrimp, then were lightly pounded for a larger surface area. One of the patties was sliced into 4 equal portions and rolled into the shrimp. An egg wash held the seasoned panko coating for deep frying.
I took the biggest filet from the bottom side of the flounder and the smallest one from the top side and seasoned them, added some green onion, and rolled them into pinwheels. In a 400 degree oven, they were baked for 5 minutes and basted with butter and lemon. A nice salad finished off the dish.
